Philosophy of Modern Natural Cuisine

Clayoquot Wilderness Resort's opening and long time Chef, Timothy May set about creating a unique identity for the Resort's cuisine. As the Resort started out on a floating barge, with a kitchen the size of a pantry station, he knew we needed a unique vision to help it grow.

Tim May and our current Executive Chef, Ryan Orr say the standards set by Vancouver Island farmers can easily compare to the best produce Europe has to offer. Thus, "Modern Natural Cuisine" pays tribute to their skills, and the incredible array of local ingredients at their fingertips.

"Modern" relates to Tim May's adaptation of new cooking styles with old school techniques, while keeping the basics taught to him 30 years ago. "Natural" relates to how the food is prepared allowing the pure, natural flavours to come through each dish. The Resort "Cuisine" is primarily influenced by locally available ingredients.

Modern Natural cuisine is an easy way to explain Tim May's original philosophy of clean, simple, fresh food which Ryan Orr continues to use as a guideline today.

If you are lucky, you will still be able to meet Tim, as he continues to consult for the Resort and work with our current Executive Chef Ryan Orr and his team. In the meantime, Tim has also started an exciting new Gourmet take out and Catering business in nearby Tofino called Red Can Gourmet.
